Description

This Zucchini Banana Bread is a delicious way to use up ripe bananas and fresh zucchini.


Ingredients

Scale
  • 4 large eggs
  • 1 ½ cups mashed ripe banana (about 3 medium bananas)
  • 1 ¼ cups granulated sugar
  • ½ cup vegetable oil
  • 3 cups all-purpose flour (properly measured)
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1 ½ cups shredded unpeeled zucchini

Instructions

  1. Preheat oven to 350°F. Grease 2 9×5-inch loaf pans. Set aside.
  2. In a large bowl, whisk eggs, mashed banana, sugar and oil until well-combined.
  3. Add flour, baking powder, baking soda, cinnamon, and salt. Stir just until combined.
  4. Fold in zucchini just until incorporated.
  5. Pour into greased 9×5 loaf pans.
  6. Bake until a toothpick inserted in center comes out clean, about 45-50 minutes.
  7. Cool in pans for 10 minutes before removing to wire racks to cool completely.

  • This bread can be frozen for later use.
