- 1 cup diced bell peppers
- 1 cup diced onions
- salt and pepper to taste
- optional toppings: green onions, hot sauce
Instructions
- Preheat your oven to 375°F (190°C) and grease a baking dish.
- In a skillet over medium heat, cook the sausage for 6-8 minutes until browned.
- In a bowl, whisk together eggs and milk; season with salt and pepper.
- Stir in bell peppers, onions, and half of the cheese into the egg mixture.
- Layer tater tots in the greased baking dish; pour egg mixture on top.
- Bake for 30-35 minutes until golden brown and firm in the center.
