Description
A delicious strawberry chantilly cake with layers of moist cake, fresh strawberries, and a whipped mascarpone frosting.

- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- 2 tsp baking powder
- ½ cup unsalted butter, softened
- 4 large eggs
- 1 cup whole milk
- 2 tsp vanilla extract
- 8 oz mascarpone cheese, room temperature
- 1 cup heavy cream, cold
- ½ cup powdered sugar
- 2 cups fresh strawberries, sliced
Instructions
- Preheat the oven to 350°F (175°C). Grease two round cake pans and line them with parchment paper.
- In a large bowl, whisk together flour, baking powder, and a pinch of salt until combined.
- In another bowl, beat the softened butter and granulated sugar until fluffy. Add eggs one at a time followed by vanilla extract.
- Gradually mix in the dry ingredients alternating with the milk until smooth.
- Divide the batter into the prepared pans and bake for 25-30 minutes until a toothpick comes out clean.
- For the Chantilly Mascarpone, whip the heavy cream until soft peaks form. Mix mascarpone cheese with powdered sugar, then fold in the whipped cream.
- Once the cakes are cooled, layer them with sliced strawberries and the Chantilly mascarpone.
Notes
- Make sure to let the cakes cool completely before layering to prevent melting the cream.
- For added flavor, consider adding a splash of orange or lemon zest to the mascarpone mixture.
