Description

A delicious strawberry chantilly cake with layers of moist cake, fresh strawberries, and a whipped mascarpone frosting.


Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 2 tsp baking powder
  • ½ cup unsalted butter, softened
  • 4 large eggs
  • 1 cup whole milk
  • 2 tsp vanilla extract
  • 8 oz mascarpone cheese, room temperature
  • 1 cup heavy cream, cold
  • ½ cup powdered sugar
  • 2 cups fresh strawberries, sliced

Instructions

  1. Preheat the oven to 350°F (175°C). Grease two round cake pans and line them with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, and a pinch of salt until combined.
  3. In another bowl, beat the softened butter and granulated sugar until fluffy. Add eggs one at a time followed by vanilla extract.
  4. Gradually mix in the dry ingredients alternating with the milk until smooth.
  5. Divide the batter into the prepared pans and bake for 25-30 minutes until a toothpick comes out clean.
  6. For the Chantilly Mascarpone, whip the heavy cream until soft peaks form. Mix mascarpone cheese with powdered sugar, then fold in the whipped cream.
  7. Once the cakes are cooled, layer them with sliced strawberries and the Chantilly mascarpone.

Notes

  • Make sure to let the cakes cool completely before layering to prevent melting the cream.
  • For added flavor, consider adding a splash of orange or lemon zest to the mascarpone mixture.
