Instructions

  1. Rinse the sticky rice under cold water until the water runs clear. Soak the rice in water for at least 2 hours or overnight for best results.
  2. Cook the Rice: Drain the soaked rice and place it in a steamer basket lined with cheesecloth. Steam the rice over boiling water for about 20-25 minutes, or until tender. Set aside.
  3. Sauté Vegetables: In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened (about 3-4 minutes).
  4. Add Other Vegetables: Stir in the diced mushrooms, grated carrot, and diced celery. Cook for an additional 5-6 minutes until the vegetables are tender.
  5. Combine Ingredients: In a large bowl, mix the cooked sticky rice with the sautéed vegetables. Stir in the vegetable broth, dried thyme, dried sage, salt, black pepper, and fresh parsley. If using, fold in the toasted nuts for added texture.
  6. Preheat your oven to 350°F (175°C). Transfer the mixture to a greased baking dish, spreading it evenly.
  7. Bake: Cover the dish with aluminum foil and bake for 20-25 minutes. Remove the foil for the last 5 minutes to allow the top to become slightly crispy.
