Delicious and healthy quinoa banana bake perfect for breakfast or as a snack.
Ingredients

- 2 medium ripe bananas
- 2 large eggs
- 1/2 cup peanut butter (or use almond butter)
- 1/4 cup light brown sugar (packed)
- 2 tablespoons melted coconut oil or butter
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup milk
- 2 cups cooked quinoa
Instructions
- Preheat oven to 350°F and spray a 9×9 inch baking pan with cooking spray.
- Add all ingredients (except the milk and quinoa) into the baking dish.
- Mash the banana and mix everything until smooth and lump free.
- Pour in the milk and mix well.
- Stir in the quinoa and mix well to combine.
- You can bake it as is, or add your favorite toppings like sliced strawberries, blueberries, banana, chopped nuts, or chocolate chips.
- Bake for 45 to 50 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Cool, slice and serve warm or at room temperature.
Notes
- This dish can be customized with different toppings such as fruits or nuts.
