Description

A deliciously sweet and moist pineapple egg bake perfect for breakfast or brunch.


Ingredients

  • 3 large eggs
  • 1 cup granulated sugar
  • 1 stick (1/2 cup) butter, melted
  • 1 teaspoon vanilla extract
  • 1 can (20 oz) crushed pineapple in juice
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350°F and grease a medium-sized baking dish.
  2. In a bowl, whisk eggs, sugar, melted butter, and vanilla until smooth.
  3. Stir in crushed pineapple with juice, then add flour and salt. Mix until just combined.
  4. Pour into prepared baking dish and smooth out the top.
  5. Bake for 45–50 minutes or until golden and set.
  6. Let cool slightly before serving.
