Description

A delicious dessert bar combining the flavors of cranberries and white chocolate in a buttery blondie.


Ingredients

Scale
  • 3/4 cup unsalted butter (melted)
  • 1 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 and 1/2 cups all purpose or gluten-free flour
  • 1/4 teaspoon salt
  • 1 cup white chocolate chips
  • 1 cup fresh or frozen cranberries

Instructions

  1. Preheat the oven to 325 degrees. Grease or spray with non-stick cooking spray and line an 8×8 baking pan with aluminum foil or parchment paper, leaving some overhang.
  2. In a large mixing bowl, add the melted butter and brown sugar and whisk together just until combined.
  3. Add the egg and vanilla and mix until combined.
  4. Stir in the flour and chocolate chips and incorporate.
  5. Fold in the fresh or frozen cranberries.
  6. Pour the batter into the prepared pan and smooth out.
  7. Transfer to the oven and bake for approximately 30 minutes or until golden on the edges and a skewer inserted in the middle comes out clean.
  8. Leave in the pan to cool completely. Cut into squares to serve.
