A vibrant and fresh dressing perfect for salads or dipping.
Ingredients
Scale
- ½ cup roughly chopped red onions
- 3 tablespoons freshly grated ginger
- 1 clove of garlic (peeled and chopped)
- 2 stalks celery (roughly chopped)
- ½ cup extra virgin olive oil
- ¼ cup rice vinegar
- 2 tablespoons soy sauce (use tamari for gluten-free)
- 3 teaspoons ketchup
- 2 teaspoons granulated white sugar
- 2 teaspoons freshly squeezed lime juice
- ½ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- water (as required)
Instructions
- Add all the ingredients to a small food processor or a blender.
- Process until mostly smooth.
- Add water, 1 tablespoon at a time until you have reached the desired consistency.
- Refrigerate the dressing for at least 30 minutes before serving.
Notes
- Adjust the consistency by adding more or less water.
- Great for salads, grilled vegetables, or as a marinade.
