Description

A vibrant and fresh dressing perfect for salads or dipping.


Ingredients

Scale
  • ½ cup roughly chopped red onions
  • 3 tablespoons freshly grated ginger
  • 1 clove of garlic (peeled and chopped)
  • 2 stalks celery (roughly chopped)
  • ½ cup extra virgin olive oil
  • ¼ cup rice vinegar
  • 2 tablespoons soy sauce (use tamari for gluten-free)
  • 3 teaspoons ketchup
  • 2 teaspoons granulated white sugar
  • 2 teaspoons freshly squeezed lime juice
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • water (as required)

Instructions

  1. Add all the ingredients to a small food processor or a blender.
  2. Process until mostly smooth.
  3. Add water, 1 tablespoon at a time until you have reached the desired consistency.
  4. Refrigerate the dressing for at least 30 minutes before serving.

Notes

  • Adjust the consistency by adding more or less water.
  • Great for salads, grilled vegetables, or as a marinade.
