Description

A delicious and easy taco salad that’s perfect for a quick meal or potluck.


Ingredients

  • 1 lb ground beef or turkey
  • 3 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup sour cream
  • 2 tbsp taco seasoning
  • 1 cup tortilla chips, crushed
  • 1 avocado (optional), sliced

Instructions

  1. In a skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain excess fat and add taco seasoning according to package instructions. Cook until fragrant.
  2. While the meat cooks, wash and chop the romaine lettuce into bite-sized pieces. Place in a large bowl.
  3. Once the meat cools slightly, layer it over the lettuce. Add halved cherry tomatoes and shredded cheese on top.
  4. Dollop sour cream and diced avocado if using; drizzle salsa for extra flavor.
  5. Crush tortilla chips over the salad just before serving for added crunch.
