Description
A delicious egg salad sandwich made with hard boiled eggs, mayonnaise, mustard, and fresh vegetables.

- 12 eggs hard boiled and cooled
- 1/2 cup mayonnaise
- 2 teaspoons dijon mustard
- 2 green onion thinly sliced
- 1 rib celery finely diced
- 1 tablespoon fresh dill chopped
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 6 slices of romaine lettuce
- 12 slices of wheat bread
Instructions
- Cut 12 hard boiled and cooled eggs in half. Remove the yolks and chop the egg whites.
- Mash the egg yolks with ½ cup mayonnaise, 2 teaspoons dijon mustard, ¼ teaspoon salt, and ¼ teaspoon pepper until smooth and creamy.
- Add the chopped egg whites, 2 thinly sliced green onions, 1 finely diced rib celery, and 1 tablespoon chopped fresh dill. Stir until well combined.
- Serve the egg salad on 12 slices of wheat bread with 6 slices of romaine lettuce.
Notes
- For a creamier texture, adjust the amount of mayonnaise to taste.
- Feel free to add other ingredients such as pickles or capers for additional flavor.
