Description

A delicious egg salad sandwich made with hard boiled eggs, mayonnaise, mustard, and fresh vegetables.


Ingredients

  • 12 eggs hard boiled and cooled
  • 1/2 cup mayonnaise
  • 2 teaspoons dijon mustard
  • 2 green onion thinly sliced
  • 1 rib celery finely diced
  • 1 tablespoon fresh dill chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 6 slices of romaine lettuce
  • 12 slices of wheat bread

Instructions

  1. Cut 12 hard boiled and cooled eggs in half. Remove the yolks and chop the egg whites.
  2. Mash the egg yolks with ½ cup mayonnaise, 2 teaspoons dijon mustard, ¼ teaspoon salt, and ¼ teaspoon pepper until smooth and creamy.
  3. Add the chopped egg whites, 2 thinly sliced green onions, 1 finely diced rib celery, and 1 tablespoon chopped fresh dill. Stir until well combined.
  4. Serve the egg salad on 12 slices of wheat bread with 6 slices of romaine lettuce.

Notes

  • For a creamier texture, adjust the amount of mayonnaise to taste.
