Description

A comforting side dish made with creamy mashed sweet potatoes and topped with mini marshmallows.


Ingredients

  • 4 cups mashed sweet potatoes (about 34 medium sweet potatoes)
  • ½ cup brown sugar, packed
  • ¼ cup unsalted butter, melted
  • ½ teaspoon ground cinnamon
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 cup mini marshmallows
  • Optional topping: ½ cup chopped pecans

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a baking dish.
  2. Peel, boil, and mash sweet potatoes until smooth.
  3. In a large bowl, mix mashed sweet potatoes with brown sugar, melted butter, cinnamon, vanilla, and salt.
  4. Spread the sweet potato mixture evenly in the prepared baking dish.
  5. Sprinkle mini marshmallows on top. Add pecans if desired.
  6. Bake for 25–30 minutes, until marshmallows are golden and the casserole is heated through.
  7. Serve warm as a comforting side dish.
