Description
A comforting side dish made with creamy mashed sweet potatoes and topped with mini marshmallows.
Ingredients

- 4 cups mashed sweet potatoes (about 3–4 medium sweet potatoes)
- ½ cup brown sugar, packed
- ¼ cup unsalted butter, melted
- ½ teaspoon ground cinnamon
- ½ teaspoon vanilla extract
- ¼ teaspoon salt
- 1 cup mini marshmallows
- Optional topping: ½ cup chopped pecans
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a baking dish.
- Peel, boil, and mash sweet potatoes until smooth.
- In a large bowl, mix mashed sweet potatoes with brown sugar, melted butter, cinnamon, vanilla, and salt.
- Spread the sweet potato mixture evenly in the prepared baking dish.
- Sprinkle mini marshmallows on top. Add pecans if desired.
- Bake for 25–30 minutes, until marshmallows are golden and the casserole is heated through.
- Serve warm as a comforting side dish.
