Description

A delicious and easy recipe for whole chicken cooked in a crockpot with lemon and herbs.


Ingredients

  • 45 pounds whole chicken
  • 2 tablespoons olive oil
  • 1 lemon, halved
  • 1 tablespoon minced garlic
  • 2 teaspoons fine sea salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon dried rosemary or 1 tablespoon fresh minced rosemary
  • 1 teaspoon dried thyme

Instructions

  1. Pat chicken dry, rub with olive oil, and season with salt, pepper, rosemary, and thyme.
  2. Place lemon halves in the cavity of the chicken.
  3. Cook breast-side up in crockpot on high for 2-3 hours or low for 4-5 hours.
  4. Broil for crispy skin if desired.
