Instructions

  1. Wash the cucumbers thoroughly and peel them if desired. Slice them thinly using a sharp knife or a mandoline for even slices.
  2. Place the sliced cucumbers in a large bowl and sprinkle with kosher salt. Let them sit for about 5 minutes to draw out excess moisture.
  3. In a small bowl, combine the rice vinegar, soy sauce, sesame oil, sugar, and chili flakes. Whisk together until the sugar is dissolved and the mixture is well blended.
