Ingredients

  • 1/2 cup (60g) powdered sugar
  • 1/2 tablespoon instant coffee granules
  • 1 tablespoon hot water
  • 1/2 teaspoon vanilla extract
  • 1 cup (120g) all-purpose flour
  • 1 tablespoon cocoa powder
  • 1/4 teaspoon salt

Instructions

  1. Bloom the coffee in a small bowl by mixing the instant coffee granules with hot water. Stir until completely dissolved. This blooming step helps intensify the coffee flavor in the dough, similar to how you’d prep espresso for tiramisu or mocha desserts.
  2. Cream the butter and sugar in a mixing bowl until smooth. No need for a mixer here—a sturdy spatula or wooden spoon works just fine. This gives the cookies their melt-in-the-mouth texture.
  3. Add in the bloomed coffee and vanilla extract until everything is well combined. At this point, your kitchen will start to smell like a café.
  4. Mix the dry ingredients in a separate bowl, whisking together the all-purpose flour, cocoa powder, and salt. Gradually add the dry mixture into the wet ingredients. Mix just until the dough comes together.
  5. Shape about 1 teaspoon of dough into an oval shape with your hands. Use a butter knife or a toothpick to gently press a line down the center of each one to resemble a coffee bean.
  6. Chill the shaped cookies on a parchment-lined tray in the refrigerator for at least 30 minutes. This helps them hold their shape while baking.
  7. Preheat your oven to 325°F (160°C). Bake the cookies for 10–12 minutes. They won’t spread much, and you’ll know they’re ready when the surface looks set but not too dry.
  8. Cool the cookies on the baking sheet for 5 minutes before transferring to a wire rack. Enjoy them once they’re fully cooled, ideally with a cup of coffee or tea.
