Description

This delicious chocolate granola is a perfect blend of oats, coconut, cocoa, and chocolate chips, making for a sweet and crunchy snack.


Ingredients

Scale
  • 1 and 1/2 cups oats
  • 1/3 cup shredded coconut
  • 1/4 cup cocoa powder
  • 1/8 tsp salt
  • 2 tbsp turbinado sugar
  • 1/2 cup pecans, roughly chopped
  • 1/3 cup olive oil
  • 3 tbsp maple syrup
  • 1/2 tsp vanilla extract
  • 1/3 cup chocolate chips
  • flaky sea salt, for serving

Instructions

  1. Preheat oven to 325℉. Line a large cookie sheet with parchment paper.
  2. In a medium mixing bowl stir together the oats, coconut, cocoa powder, salt, turbinado sugar, and pecans.
  3. Add the maple syrup, olive oil, and vanilla to the dry ingredients and stir until everything is well combined.
  4. Spread the mixture onto the prepared baking sheet in an even layer, and bake for 25 minutes, stirring around the edges to prevent them from burning halfway through.
  5. Evenly sprinkle the chocolate chips over the top of the granola, and return to the oven for 2-4 minutes, until the chocolate is melty.
  6. Remove from oven and stand at room temp for 1-2 hours so it can cool and the granola clusters can set. If you don’t care about having as many of those defined clusters, enjoy warm!
  7. Definitely let it cool, though, before putting it in a storage container.

Notes

  • Enjoy with a sprinkle of flaky sea salt, if desired.
  • Store leftover granola in an airtight container or glass mason jar at room temp for 3-4 weeks.
