Description
A deliciously crispy chicken sandwich made in the air fryer, perfect for a quick meal.
Ingredients

- 2 boneless, skinless chicken breasts
- 1 cup pickle juice
- 1/2 cup buttermilk
- 1/2 cup all-purpose flour
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon powdered sweetener
- 1 teaspoon cayenne pepper (optional)
- 1 egg (beaten)
- cooking oil (I used peanut oil)
- 2 buns (I use brioche)
- 4 slices dill pickle chips
- 2 slices leaf lettuce (optional)
- 4 slices fresh tomatoes (optional)
- 1/4 cup mayo
- 2 tablespoons honey
- 2 teaspoons BBQ Sauce (hickory smoked)
- 2 teaspoons Dijon mustard
- 1 teaspoon yellow mustard
- 1/2 teaspoon xanthan gum
Instructions
- Add the chicken breasts to a sealable bag or large bowl with pickle juice and buttermilk. Refrigerate for 30 minutes.
- Combine flour, paprika, garlic powder, salt, pepper, and sweetener in a large bowl. Stir to combine.
- Beat the egg in another bowl large enough to dredge the chicken.
- Spray the air fryer basket with cooking oil.
- Remove chicken from marinade, dredge both breasts in beaten egg, then in flour. Place in air fryer basket.
- Spritz the top of the chicken with peanut oil. Spray from a distance.
- Air fry at 400 degrees for 15 minutes.
- Flip the chicken using tongs, being careful not to lose any breading. Air fry for an additional 5-7 minutes until crisp.
- Ensure chicken reaches an internal temperature of at least 165 degrees.
- For toasted buns, toast for 3-4 minutes at 400 degrees.
- Remove chicken, assemble the sandwich with buns, pickle, lettuce, and tomatoes.
- Combine mayo, honey, BBQ sauce, and mustards in a bowl. Stir to mix.
- In a separate bowl, combine xanthan gum with 2 teaspoons of sauce and stir to thicken. Add to the rest of the sauce and mix well.
Notes
- Use a sealable bag or bowl for brining the chicken.
- Adjust seasoning to your taste.
- The use of egg is optional but helps keep the breading intact.
