Description
Delicious crispy chicken sandwich made in the air fryer for a healthier twist on a classic favorite.
Ingredients

- 2 boneless, skinless chicken breasts
- 1 cup pickle juice
- 1/2 cup buttermilk
- 1/2 cup all-purpose flour
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon powdered sweetener
- 1 teaspoon cayenne pepper (Optional)
- 1 egg (beaten)
- Cooking oil (I used peanut oil)
- 2 buns (I use brioche)
- 4 slices dill pickle chips
- 2 slices leaf lettuce (Optional)
- 4 slices fresh tomatoes (Optional)
- 1/4 cup mayo
- 2 tablespoons honey
- 2 teaspoons BBQ Sauce (hickory smoked)
- 2 teaspoons Dijon mustard
- 1 teaspoon yellow mustard
- 1/2 teaspoon xanthan gum
Instructions
- Brine the chicken with pickle juice and buttermilk in a sealable bag or bowl. Refrigerate for 30 minutes.
- Combine flour, paprika, garlic powder, salt, pepper, and sweetener in a large bowl.
- In another bowl, add the beaten egg.
- Spray the air fryer basket with cooking oil.
- Remove chicken from marinade; dredge in beaten egg then flour. Place in air fryer.
- Spritz tops of chicken lightly with peanut oil.
- Air fry at 400°F for 15 minutes.
- Flip chicken carefully with tongs, spritz other side with oil, and cook an additional 5-7 minutes until crisp.
- Check internal temperature reaches at least 165°F.
- Toast buns for 3-4 minutes at 400°F.
- Assemble sandwich with chicken, pickles, lettuce, tomatoes, and desired sauces.
- Combine mayo, honey, BBQ sauce, and mustard in a bowl. Adjust flavors as needed.
- Mix xanthan gum with 2 teaspoons of the sauce in a separate bowl to thicken, then add to the main sauce.
Notes
- To substitute buttermilk, mix 1/2 cup of milk with 1/2 tablespoon of vinegar or lemon juice.
- Every air fryer model cooks differently. Monitor your results and adjust cooking times as needed.
