Description

Delicious crispy chicken sandwich made in the air fryer for a healthier twist on a classic favorite.


Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 1 cup pickle juice
  • 1/2 cup buttermilk
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon powdered sweetener
  • 1 teaspoon cayenne pepper (Optional)
  • 1 egg (beaten)
  • Cooking oil (I used peanut oil)
  • 2 buns (I use brioche)
  • 4 slices dill pickle chips
  • 2 slices leaf lettuce (Optional)
  • 4 slices fresh tomatoes (Optional)
  • 1/4 cup mayo
  • 2 tablespoons honey
  • 2 teaspoons BBQ Sauce (hickory smoked)
  • 2 teaspoons Dijon mustard
  • 1 teaspoon yellow mustard
  • 1/2 teaspoon xanthan gum

Instructions

  1. Brine the chicken with pickle juice and buttermilk in a sealable bag or bowl. Refrigerate for 30 minutes.
  2. Combine flour, paprika, garlic powder, salt, pepper, and sweetener in a large bowl.
  3. In another bowl, add the beaten egg.
  4. Spray the air fryer basket with cooking oil.
  5. Remove chicken from marinade; dredge in beaten egg then flour. Place in air fryer.
  6. Spritz tops of chicken lightly with peanut oil.
  7. Air fry at 400°F for 15 minutes.
  8. Flip chicken carefully with tongs, spritz other side with oil, and cook an additional 5-7 minutes until crisp.
  9. Check internal temperature reaches at least 165°F.
  10. Toast buns for 3-4 minutes at 400°F.
  11. Assemble sandwich with chicken, pickles, lettuce, tomatoes, and desired sauces.
  12. Combine mayo, honey, BBQ sauce, and mustard in a bowl. Adjust flavors as needed.
  13. Mix xanthan gum with 2 teaspoons of the sauce in a separate bowl to thicken, then add to the main sauce.

Notes

  • To substitute buttermilk, mix 1/2 cup of milk with 1/2 tablespoon of vinegar or lemon juice.
  • Every air fryer model cooks differently. Monitor your results and adjust cooking times as needed.
