Description

A delicious and easy air fryer chicken sandwich, perfect for a quick meal.


Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 1 cup pickle juice
  • 1/2 cup buttermilk
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon powdered sweetener
  • 1 teaspoon cayenne pepper (Optional)
  • 1 egg (beaten)
  • cooking oil (peanut oil recommended)
  • 2 buns (brioche preferred)
  • 4 slices dill pickle chips
  • 2 slices leaf lettuce (Optional)
  • 4 slices fresh tomatoes (Optional)
  • 1/4 cup mayo
  • 2 tablespoons honey
  • 2 teaspoons BBQ Sauce (hickory smoked)
  • 2 teaspoons Dijon mustard
  • 1 teaspoon yellow mustard
  • 1/2 teaspoon xanthan gum

Instructions

  1. Brine the chicken: Add chicken breasts to a bowl or sealable bag along with pickle juice and buttermilk. Refrigerate for 30 minutes.
  2. Prepare dredging mixture: In a large bowl, combine flour, paprika, garlic powder, salt, pepper, and sweetener.
  3. In another bowl, add the beaten egg.
  4. Spray the air fryer basket with cooking oil.
  5. Remove chicken from the marinade, dredge in beaten egg, then in flour mixture. Place in air fryer basket.
  6. Spritz top of chicken with peanut oil.
  7. Air fry at 400 degrees for 15 minutes.
  8. Flip chicken gently and spritz the other side with oil. Air fry for an additional 5-7 minutes until crisp and cooked through (at least 165 degrees internal temperature).
  9. Toast buns for 3-4 minutes at 400 degrees if desired.
  10. Assemble the sandwich: Add chicken, mayo, honey, BBQ sauce, and mustard. Add lettuce and tomatoes if using.
  11. Mix xanthan gum with 2 teaspoons of sauce in a separate bowl to thicken, then incorporate it into the sauce.

Notes

  • To substitute buttermilk, use milk and vinegar or lemon juice.
  • Xanthan gum can be replaced with cornstarch as needed.
