A delicious and easy air fryer chicken sandwich, perfect for a quick meal.

- 2 boneless, skinless chicken breasts
- 1 cup pickle juice
- 1/2 cup buttermilk
- 1/2 cup all-purpose flour
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon powdered sweetener
- 1 teaspoon cayenne pepper (Optional)
- 1 egg (beaten)
- cooking oil (peanut oil recommended)
- 2 buns (brioche preferred)
- 4 slices dill pickle chips
- 2 slices leaf lettuce (Optional)
- 4 slices fresh tomatoes (Optional)
- 1/4 cup mayo
- 2 tablespoons honey
- 2 teaspoons BBQ Sauce (hickory smoked)
- 2 teaspoons Dijon mustard
- 1 teaspoon yellow mustard
- 1/2 teaspoon xanthan gum
Instructions
- Brine the chicken: Add chicken breasts to a bowl or sealable bag along with pickle juice and buttermilk. Refrigerate for 30 minutes.
- Prepare dredging mixture: In a large bowl, combine flour, paprika, garlic powder, salt, pepper, and sweetener.
- In another bowl, add the beaten egg.
- Spray the air fryer basket with cooking oil.
- Remove chicken from the marinade, dredge in beaten egg, then in flour mixture. Place in air fryer basket.
- Spritz top of chicken with peanut oil.
- Air fry at 400 degrees for 15 minutes.
- Flip chicken gently and spritz the other side with oil. Air fry for an additional 5-7 minutes until crisp and cooked through (at least 165 degrees internal temperature).
- Toast buns for 3-4 minutes at 400 degrees if desired.
- Assemble the sandwich: Add chicken, mayo, honey, BBQ sauce, and mustard. Add lettuce and tomatoes if using.
- Mix xanthan gum with 2 teaspoons of sauce in a separate bowl to thicken, then incorporate it into the sauce.
Notes
- To substitute buttermilk, use milk and vinegar or lemon juice.
- Xanthan gum can be replaced with cornstarch as needed.
- Monitor air fryer cooking times, as different models may vary.
