Description

A delicious pasta dish with Italian sausage, fresh vegetables, and a marinara sauce.


Ingredients

  • 12 oz pasta (penne, rotini, or rigatoni)
  • 1 lb Italian sausage (mild or spicy)
  • 2 tbsp olive oil
  • 1 yellow onion (diced)
  • 1 red bell pepper (sliced)
  • 1 zucchini (halved and sliced)
  • 1 cup cherry tomatoes (halved)
  • 3 cloves garlic (minced)
  • 1 cup marinara sauce
  • 0 cup pasta water (reserved)
  • 1 tsp Italian seasoning
  • 0 tsp red pepper flakes (optional)
  • salt and pepper (to taste)
  • 0 cup Parmesan (grated)
  • fresh basil (garnish)

Instructions

  1. Cook pasta in salted boiling water until al dente; reserve 1/2 cup pasta water and drain.
  2. Heat olive oil in a skillet and brown sausage until cooked through.
  3. Add onion, bell pepper, zucchini, and tomatoes; sauté until softened.
  4. Add garlic, Italian seasoning, and red pepper flakes; cook 1 minute.
  5. Pour in marinara sauce and simmer 2–3 minutes.
  6. Add pasta to skillet and toss with sauce, adding pasta water as needed.
  7. Stir in Parmesan and season with salt and pepper.
  8. Serve warm topped with fresh basil.

Notes

  • This dish can be customized with your favorite pasta shape.
  • Adjust the spice level by using mild or spicy sausage and adding red pepper flakes to taste.
