Description

A delicious and easy vegan pasta recipe using silken tofu to create a soft and tender dough, perfect served with your favorite pasta sauce.


Ingredients

Scale
  • 2½ cups all-purpose flour, plus more for dusting
  • 10 oz silken tofu
  • ¼ teaspoon salt
  • Your favorite pasta sauce (marinara, garlic butter, pesto, etc.)
  • Vegan parmesan (optional)
  • Fresh herbs (optional)

Instructions

  1. Add the silken tofu to a high-speed blender and blend on high for 30-60 seconds until completely smooth and creamy with no lumps. You should have about 1 cup of smooth tofu puree.
  2. Transfer the blended tofu to a large mixing bowl. Add the flour and salt. Using a wooden spoon or your hands, mix together until a shaggy, rough dough forms.
  3. Transfer the shaggy dough to a clean work surface. Knead the dough for 3-4 minutes until it becomes smooth and elastic. If the dough feels too sticky, add 1-2 tablespoons of flour at a time until it’s workable but still soft. The dough should feel soft and slightly tacky.
  4. Shape the dough into a ball and place it back in the bowl. Cover with a damp kitchen towel or plastic wrap. Let it rest at room temperature for 15 minutes.
  5. While the dough rests, bring a large pot of salted water to a rolling boil.
  6. Once the dough has rested and the water is boiling, choose your method: Lightly flour a large baking sheet. Cut all the dough into bite-sized pieces and place them on the baking sheet. Toss with flour to prevent sticking. Add to boiling water in 2-3 batches.
  7. Boil the noodles for 3-4 minutes or until they float to the top and are tender. Use a slotted spoon to transfer cooked noodles to your prepared sauce.
  8. Add all cooked noodles to your prepared sauce in a large skillet. Toss gently over low heat for 1-2 minutes to coat evenly. Add pasta water if needed to loosen the sauce.
  9. Divide among bowls and garnish with vegan parmesan, fresh herbs, or a drizzle of olive oil. Serve immediately.

Notes

  • This pasta dough can also be used for ravioli or other stuffed pasta dishes.
