Description

Deliciously rich brownies layered with creamy strawberry cheesecake.


Ingredients

  • 3 ounces chopped strawberries
  • 8 ounces cream cheese, softened at room temperature
  • 50 grams granulated sugar
  • 1 large egg, at room temperature
  • ¾ cup all-purpose flour
  • 200 grams granulated sugar
  • 27 grams cocoa powder
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • 1 teaspoon instant coffee
  • 125 ml vegetable oil
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 112 grams semisweet chocolate chips

Instructions

  1. Preheat oven to 350 degrees F. Spray an 8×8-inch baking dish with cooking spray.
  2. Add chopped strawberries to a blender and puree until smooth.
  3. In the bowl of a stand mixer, beat softened cream cheese with 50 grams of sugar for 2-3 minutes or until well combined. Add strawberry puree and 1 large egg, and beat until well combined.
  4. In a large bowl, combine ¾ cup flour, 200 grams sugar, 27 grams cocoa powder, ½ teaspoon salt, ½ teaspoon baking powder, and 1 teaspoon instant coffee.
  5. In a separate bowl, whisk together 125 ml vegetable oil with 2 large eggs and 1 teaspoon vanilla extract. Add the wet ingredients to the flour mixture, stirring until smooth.
  6. Add 112 grams chocolate chips, folding until well combined.
  7. Remove ½ cup of the brownie batter and add 1 tablespoon water, mixing until well combined.
  8. Pour the remaining brownie batter into the prepared baking dish, followed by the cheesecake batter. Place dollops of the reserved brownie batter on top, using a knife to make swirls with the brownie batter.
  9. Bake for 30-35 minutes or until the edges have set but the center is still a little jiggly.
  10. Remove from the oven and let cool completely. Transfer to the refrigerator and chill for at least 1 hour. Slice and serve.

Notes

  • For the best flavor, use ripe strawberries.
  • Chilling the brownies helps set the cheesecake layer perfectly.
